Simply place the absinthe spoon and sugar atop the glasses and the glasses beneath the pour spouts. Turn the spigot slowly and let the cold water flow over the sugar until it has completely dissolved into the absinthe. This action releases oils and perfumes the air with fennel, grand wormwood and anise. The combination of the sugar water and absinthe begins to turn milky white in color, as the water mixes with the anise. Refresh water before each use.
